Eryngii are King Oyster mushrooms. We import them from Asia because of their size and high quality. This mushroom has a beautiful white meat and re-hydrates very well. I love their flavor and texture so I soak them in hot water for only 10 minutes and add them to scalloped potatoes. They layer in with the potatoes and add a wonderful mushroom flavor to the dish.
